The LOKAL Manifesto
Living and cooking in Jesi and Colorno Italy, shaped how I look at food. When one cooks with the idea that your food was grown or raised within a few kilometers, you begin to adapt your taste and expectation for what you are eating. You do not eat a tomato in winter...they don't grown at that time.
When I conceived LOKAL, I began by talking to farmers. What do they grown year around? How do they raise their crops. Do they distribute outside of their county? These answers shaped LOKAL's menu, a narrow vegan based menu who's ingredients we make. We use no processed foods.
